Abdoulaye Sadio Diallo put the game beyond doubt in the 81st minute, before Jouffre wrapped up the scoring from the penalty spot three minutes from time.
The result sees Christian Gourcuff's men four points clear of Valenciennes, while Evian are now six points from the danger zone.
