The Argentine scored his second of the match midway through the second half when he lashed the ball high into the top corner from inside the box.
Former Espanyol defender Jose Callejon put the game out of reach on 82 minutes after Ronaldo was again the provider.
Higuain secured his hat-trick with a minute to play when he chipped a neat finish over the keeper.
